Why do eggs and shrimp now earn more stars?
Although both eggs and shrimp contain relatively high amounts of dietary cholesterol, the Guiding Stars algorithm reflects the most current scientific research as it relates to nutrition and health. Current scientific evidence does not support a direct link between dietary cholesterol intake and blood cholesterol levels, and the latest Dietary Guidelines for Americans no longer recommend a quantitative limit to daily cholesterol consumption. In order to align the Guiding Stars algorithm with this current science, the algorithm was changed to remove debits for dietary cholesterol. Hence, the number of stars earned by eggs and shrimp has increased.
